Patate Anglais

This is Virgie’s mother’s recipe for stuffed potatoes. She served this on special occasions.

6 large new (red) potatoes seasoning: red pepper, black pepper,
6 cloves garlic, minced Mrs. Dash Garlic seasoning, etc.
1 large onion, minced 3 tblsps. extra-virgin olive oil
2 heads green onions, minced

At one end of each potato, bore a large hole with an apple corer. Save the guts of the potato and the plug you removed with the corer. With half the potato guts, season and stuff hole in each potato. Replace the plug on top of potato.

In a heavy iron pot, heat oil. Add potatoes. Turn potatoes until brown on all sides. Cover and cook on medium heat 30-45 minutes or until potatoes are soft all the way through.

With the other half of the potato guts: season, roll in flour and add to pot while potatoes are browning. Cook with the rest of the potatoes.
