1 dozen hard-boiled eggs
1 cup mayonnaise
1/2 tsp. Prepared horseradish
1/3 cup dill pickle relish
seasoning of your choice, to taste
paprika, dried minced parley, sliced green olives for garnish
After pacquing eggs with the family, clean the boiled eggs and carefully cut in half length-wise, trying not to tear the white halves. Place yolks in a mixing bowl and place white halves on a pretty egg tray dish thingy (everybody has at least one of these things, don’t they?) Actualy, you will need 2 dishes because this makes 24 halves.
Mash the yolks with the tines of a fork; add mayonnaise, horseradish, relish, and seasoning and mix well. Stuff the whites with the yolk mixture; sprinkle with paprika and parsley, and top each egg half with a slice of the green olive. Keep chilled until serving. Makes 24 halves.
