3 tablespoons olive oil
2 or 3 links sausage, diced
1 large onion, coarsely chopped
4 or 5 large peeled potatoes, diced
2 cloves garlic, chopped
3 cups buttermilk
2 stalks celery, chopped
2 cups water
Seasoning to taste
In a large dutch oven, heat the oil then sauté the onions, garlic and celery for about 5 minutes. Add the sausage, potatoes and seasoning and cook another 5 minutes. Add the buttermilk and water. Cover and cook on medium heat until potatoes are cooked, about 20 minutes. Mash with a potato masher. Serve with hot, crusty French bread.
