Black Bean Burgers

2 cans black beans, drained and rinsed                    1 package taco seasoning                                                  1/2 cup vegetable broth                                                            (salt-free, if you can find it. I make my own)      1 medium yellow onion, minced                                 1 1/2 cups fresh or frozen corn, or 1 can,                         2 jalapeño peppers, seeded and minced                                   drained and rinsed                                               4 cloves garlic, minced                                                1 egg (or just the white, totally up to you)                         8 baby carrots, minced                                               1 1/2 cups instant oatmeal, uncooked                            1/2 tsp. minced, fresh cilantro

Rinse beans and drain in a colander; set aside. Sauté the minced veggies in the broth and  over high heat about 10 minutes or until very soft. Add the beans, the cilantro, and the taco seasoning; mix thoroughly.  Remove from heat and let cool.

When beans have cooled enough to handle, smash with a potato masher or blend in a food processor until as smooth as you can get them. Fold in the corn and oats; refrigerate for 15 minutes or so, just so the oats can absorb the liquid and become soft. Add the egg (white) and blend thoroughly. The mixture should have enough body so that you can shape it into 6 balls; flatten into patties, and grill for 5 minutes on each side or bake at 350 for 15-20 minutes.

*I have had trouble keeping them from splitting when grilling, so I place them on foil on the grill to keep them together.
