Here’s a great tasting, healthy snack or breakfast bar; much better and better for you than the ones you can buy.
1/2 cup butter, softened 1 tsp. baking powder
½ cup brown sugar 1 tsp. ground cinnamon
2 eggs 1 tsp. ground nutmeg
½ cup soy or almond/coconut milk 3 cups whole grain quick cooking oats
½ cup flax seed ½ cup dried cranberries 2 cups whole wheat flour ½ cup chopped pecans 1 tsp. baking soda 1/2 cup chocolate chips Pinch salt
Line a metal baking sheet with foil and spray with olive oil spray. Set aside and preheat oven to 350 degrees.
Cream together the butter, brown sugar, and eggs until light and fluffy then stir in the milk.
Sift together the dry ingredients, then stir into the creamed mixture, using a heavy wooden spoon. Stir in the oats, cranberries, pecans, and chips. Dough should be fairly thick.
Dump the dough in the middle of the foil-lined baking sheet, and spread evenly, working it out from the middle to the edges.
Bake in preheated oven for about 25 minutes or til golden. Remove, cool, and cut into bars. Store in an airtight container.
