Peanut Butter Cups

1 (12 oz.) package chocolate chips ¾ cup confectioners’ sugar
2 tblspns. shortening 1 tblspn. melted butter
¾ cup creamy peanut butter*

Mix chocolate and shortening in microwave. Pour small amount in the bottom of each paper lined muffin tin. Roll pan around to coat the sides and bottom of paper. Chill in fridge until set (about 30 minutes).

Mix peanut butter, confectioner’s sugar and butter. Pat a small amount into each muffin cup on top of chocolate. Top with remaining chocolate and cool until set in the fridge.

*Jodi says to use store brand peanut butter because the better brands tend to be too soft. These are delicious!
