1 cup (2 sticks) butter
2 cups sugar
2 tsp. vanilla
4 eggs
1/3 cup natural unsweetened cocoa
2 tbs. canola oil
1 cup all-purpose/whole wheat flour
1/2 cup dark chocolate chips
1/2 cup chopped Louisiana pecans
Preheat oven to 325 degrees. Grease a 8x8x2 inch baking dish and set aside.
In a large mixing bowl, cream together the butter, sugar, and vanilla. Beat in eggs, one at a time; beat until smooth. Add the cocoa powder and canola oil mixing with a spatula until moistened (if you use a hand mixer, the powder will probably fly all over your kitchen. If using a stand mixer, it’s less likely to happen, so use your own judgement).
Mix in the flour; blend until smooth. Fold in the chocolate chips and nuts. Turn into the baking dish and bake 30 to 35 minutes. Cool; cut into squares and serve.
