These are my favorite Christmas cookies! They’re also Uncle John Marceaux’s favorites. The double recipe comes from Nanny and can be easily halved.
In the bowl of a large stand mixer, cream together lb. unsalted butter, 2 cups brown sugar, 2 cups white sugar. Mixing on medium, add 4 eggs, one at a time.
In a separate bowl combine 4 cups flour, 2 tsp. baking powder, 2 tsp. baking soda, and 2 tsp. vanilla. Slowly add to the dough mixture; mix on medium speed until soft dough is formed.
Add: ***
1 cup chopped pecans, 2 cups uncooked oatmeal, 3 cups Post Toasties dry cereal, 1 cup coconut, 1 (6 oz.) bag semi-sweet chocolate chips, 1 (6 oz.) bag milk chocolate chips, and 1 (6 oz. ) bag butterscotch chips.
Mix ingredients well with a large wooden spoon. Dough will be very thick. Chill dough 2 hours. Drop by tablespoons onto parchment lined baking sheets, spacing well. Bake @ 350 degrees for 12-15 minutes or until browned. Remove from baking sheets and cool.
***Be creative here, these are just suggestions. I’ve substituted walnuts, different brands of corn flake cereal, and peanut butter chips, toffee chips, etc.
