Chocolate Fudge Cake

3 eggs 1 tsp. vanilla
12/3 cup sugar 2 cups flour
1½ cup milk 1 tsp. baking soda
3 unsweetened chocolate squares ½ tsp. salt
½ cup (1 stick) butter

In the top of a double boiler (or I use a large glass mixing bowl over a small saucepan of water) combine 1 lightly beaten egg, 2/3 cup sugar, and the chocolate squares. Stir over medium heat until the chocolate melts and the mixture just reaches boiling; set aside to cool.

In the bowl of an electric mixer, cream 1 cup of sugar, and the butter until light and creamy. Add vanilla and the 2 eggs (one at a time), beating well after each addition.

Mix together the flour, soda and salt. Add to the creamed mixture alternately with the milk, beating well after each addition. Blend in the chocolate mixture until smooth. Bake in 2 greased and floured 9 inch round cake pans, (or 2 paper-lined muffin tins) in a 350 degree oven for 25 to 30 minutes.
