2 cups flour 1 cup water
2 cups sugar 3 tbsp. unsweetened cocoa powder
1/2 cup canola oil Or
1 stick unsalted butter. 1 square unsweetened baking chocolate
2 eggs 1 tsp. Baking soda
1/2 cup buttermilk 1/2 tsp. Vanilla
Combine in a large mixing bowl the sugar and flour. Either in a saucepan or in the microwave, melt the butter and chocolate square. Add oil and water (and cocoa if you’re using powdered). Combine with dry mixture and beat @ low speed for 1 minute.
Beat in the eggs, add buttermilk and vanilla. Mix lightly. Sprinkle baking soda over mix, and beat for 1 minute. Pour into 11x8x2 inch baking dish and bake at 400 degrees for about 30 minutes. Ice while hot.
1 stick butter
1/3 cup evaporated milk
3 tblspns. unsweetened cocoa or 1 unsweetened chocolate baking square.
3 cups confectioner’s sugar
1 tblspn. vanilla
Bring butter, milk and cocoa to a boil in a small saucepan. Remove from heat and stir in confectioner’s sugar and vanilla. Beat until smooth and creamy. Pour over hot cake and let cool.
This is the easiest cake to make, and it is absolutely delicious. The boys prefer this cake to any fancy decorated cake, with the possible exception of a cookie cake you can buy at the mall. Iicing Miand invariably wilpronounce “decorations!”
