Mom found this in one of Nanny’s old recipe books. It was cut out of a newspaper.
4 cups peeled figs
2 boxes (regular) strawberry jello
3 cups sugar
Be sure figs are not too soft and watery. Place dry gelatin on top of peeled figs, then sugar on top. Let stand 45 minutes. This brings juice to the top.
Put on low fire and cook 5 minutes. Raise fire gradually, cooking for about 15 minutes. Bring almost to a boil but not a fiery boil as this will make the preserves turn dark.
When figs are done (tender), seal in sterile jars (makes 3 pints).
