For someone who claims she can’t cook, this is pretty fabulous! She notes that separately, she finds these ingredients very unappetizing, but put them all together and they are fabulous.
1 stick unsalted butter
1 medium onion, chopped fine
2 (10 oz.) packages frozen chopped spinach, thawed and well drained
1 (14 oz.) can artichoke hearts, drained and chopped
1 (8 oz.) package cream cheese, softened
1 (8 oz.) package sour cream
1 cup shredded Monterey Jack cheese, divided
1 cup grated parmesan cheese,divided
In a heavy saucepan, melt the butter; add the onions and sauté until soft. Stir in spinach, artichokes, cream cheese, sour cream, ¾ cup Monterey Jack cheese, and ¾ cup parmesan cheese. Stir together to blend and heat through. Transfer to a ½ quart casserole dish and top with the remaining cheeses. Bake at 350 degrees until cheese is lightly browned-10 to 15 minutes. Serve hot with a variety of crackers or chips.
