Make your own Limoncello

With a very sharp vegetable peeler, peel 8 large lemons. Make sure to get the least amount of white pith. Place lemon peel in a large glass jar (like an empty pickle jar) and cover with about 2 cups vodka. Sit in a cool, dry location for 4 to 5 days; strain into another large jar. Refrigerate. Use in Limoncello lemonade or sip from shot glasses.
