We spent Thanksgiving ‘08 at the Copeland’s ranch in Sterling City. This is from one of the cousins (Amy Copeland Calhoun; cousin Johnny Copeland’s daughter).
10 slices bacon, cooked
1 cup mayo
1¼ cup grated Mexican blend cheese
½ cup grated carrots
½ cup diced green peppers or celery
1 (8 oz.) can sliced water chestnuts
6 cups popped popcorn
2 tblsps fresh chives
Combine everything in a pretty salad bowl and watch everyone try to figure out what’s in it. It makes a very pretty presentation.
