The mystery is why I only make this for Christmas because everyone raves every time I serve it.
2 tblspns. fresh squeezed lime juice 1 cup walnuts, chopped
2 tspns. Dijon mustard 3 tblspns. sugar
½ cup extra virgin olive oil 1½ cups dried cranberries
¼ cup chopped fresh chives or green onions 1 head romaine lettuce, torn
2 or 3 large Granny Smith apples, coarsely chopped
Whisk with one of those egg-beater things the lime juice and mustard. Gradually whisk in the olive oil. Place the chopped chives, apples and walnuts in a glass bowl and pour dressing mixture over it. Toss to coat, cover with plastic wrap and refrigerate for at least 2 hours. Sprinkle the sugar over the cranberries in another small bowl and toss to coat. When ready to serve, add the cranberries to the apple mixture and place on top of lettuce in a beautiful serving bowl. This is sooo simple; it looks fabulous, and tastes even better.
