You’re going to need 3 mixing bowls to prepare the batter, but the dirty dishes are worth it! Cook in a nice ceramic dish, and serve from the dish or turn out and gift wrap.
1¼ cup white flour. 1 stick butter
½ cup whole wheat flour 1 cup sugar
1 tsp. baking soda. ½ cup brown sugar
1 tsp. salt 2 eggs
3 or 4 over-ripe bananas ¼ cup buttermilk
Juice of ½ lemon 1 tsp. vanilla
1 cup chopped pecans (or walnuts)
In a medium mixing bowl, mix together flours, soda and salt. In a smaller bowl, mash bananas and sprinkle with lemon juice; set aside. In the largest bowl, cream together butter and sugars; add eggs, one at a time, beating well after each. Add the flour and buttermilk alternately, ending with flour. Mix in vanilla, and then fold in bananas and nuts. Pour batter into a greased, floured loaf pan and bake at 325 for 1 hour and 15 minutes, or until toothpick inserted in middle comes out clean. Cool for 15-20 minutes and slice. This freezes well.
